Savour the Best of 1950s Diner Vibes at Ghostwriter's 'Quality Melts'

Ghostwriter, Singapore's newest F&B incubation space, is kicking off the month of February with a bang! Get ready for a gastronomic adventure like never before as we bring you Quality Melts by Edwin Tan, a former Sago House alum who is all set to take the city by storm with his sizzling hot menu!

Read our chat with Sago House's founder, Jay Gray about Passion, Poetry and Charles Bukowski.

Say hello to the 1950s diner aesthetic with a twist! Edwin is paying homage to the classic American diner style, but with a focus on bringing the famous "Chopped Cheese" to Singapore. And that's not all! This culinary genius is not just about slinging burgers, he's also about serving up his signature Quality Sodas - an unbeatable blend of high-end spirits (including Stranger & Sons gin, Buffalo Trace, Nusa Cana rum, Mezcal Union and Wheatley Vodka), carbonated sodas, and a touch of magic that's sure to leave you feeling refreshed and invigorated!

With a menu that's sure to tantalize your taste buds, Quality Melts is all about the Chopped Cheese. Choose from a range of options including beef, pork or cauliflower, and upgrade to a set that includes the sandwich and your choice of Tater Tots or Coleslaw (S$20). Indulge in the Loaded Tots, a delicious twist on the classic tot, loaded with meat, chilli mayo, cheddar and colby jack cheese (S$15). And for those who love their meat smoky and tender, Edwin has got you covered with his famous Burnt Ends - smoked sausages served with coleslaw and milk buns (S$15).

The Chopped Cheese dish is a New York City bodega favourite: a hoagie roll stuffed with mixture of beef and smothered with cheese  (S$15).

And let's not forget the drinks! Edwin is rolling out a full grill and bar experience, and that means you can choose from mixed drinks like the Wake Me Up Before You Go Go with Codigo Blanco, grapefruit, lime, soda and sea salt; Kabukin Us, But You Playin’ with Suntory Kakubin, lemon and soda; and In-Betweeners with Stranger & Sons, cucumber, ginger, basil and lime. For those who prefer to keep it alcohol-free, there's a range of non-alcoholic options (S$10) like the Beatnik's Brew with elderflower, lime and tonic; Pucker Up with cranberry, grapefruit, lime and soda, and Walking On A Dream with cucumber, basil, lime and soda. And for the ultimate sweet treat, don't miss the booze-free slushies, available with a double shot of Codigo Tequila for an extra kick.

Quality Melts' Burnt Ends is a decadent dish of smoked sausages served with coleslaw and milk buns.

Ghostwriter is all about providing a unique and intimate dining experience, seating up to 10 guests at a time. It's the perfect place to beta test your F&B concepts, gather real data and insights, and impress potential investors or business partners with your brand and network. About Ghostwriter

The new concept from the team behind Sago House, Low Tide, and the newly opened Underdog Inn, Ghostwriter is in essence an incubation space. After successfully launching ‘Dirty Supper’ by Executive Chef Pete Smit in the second half of 2022, the space began hosting new concepts monthly from January 2023. The concept gives entrepreneurial F&B operators a chance to dip their toe into ownership, working closely with Founder Jay Gray to expand out of their current setup or take the plunge and introduce their ideas to the world. For more information, visit the website and follow on Instagram @ghostwritersg for the latest updates.
