
67 Pall Mall Singapore is celebrating the 10th anniversary of the flagship 67 Pall Mall club with the launch of a brand-new cocktail menu ‘The Inspired’, comprising of six Hong Kong cinema-inspired cocktails at its Whisky Bar and Naughty Corner.
Every movie-lover worth their salt should know of the exciting nature of Hong Kong cult action films, several of which were released in 2015, the same year 67 Pall Mall opened its doors in London. Each cocktail on the new menu will pay tribute to the golden age of Hong Kong cinema, and reinterpret an iconic film - from high-octane classics to emotional thrillers - into modern mixology.
The collection also aptly pays tribute to its Singapore home in Shaw Centre, a storied symbol of Asian cinema, profoundly connected to the legacy of Hong Kong film through the legendary Shaw Brothers.

The brains behind this new concept is 67 Pall Mall's Head of Beverage Ricky Peti and his team. Ricky, who joined 67 Pall Mall Singapore before its 2022 opening, was inspired by his love for classic Hong Kong action films to create a program with explosive drama and bold style.
In addition to cocktails, members can also savour a range of over 400 premium spirits, including rare and independently bottled whiskies available by the glass. All this, tucked away in a cosy 55-seat lounge within the former penthouse bedroom of movie mogul Tan Sri Dr Runme Shaw.
67 Pall Mall also has a rather lovely food menu, including but not limited to (Top to bottom), frites, Caesar salad, chicken bites and a delicious scotch egg.
We had the good fortune of getting our hands (and palates) on the six new cocktail offerings with a gracious hosting by the folks at 67 Pall Mall. Here's what to expect!
Bittersweet IP 3 Inspired by IP Man 3
Veritas White Rum, Ableforth’s Rumbullion!, Spiced Rum, Mr Black Coffee Liqueur, Licor 43, cold brew, lychee granita.
As it's name suggest, this creation is inspired by the movie IP Man 3, and is also a take on an espresso martini. Said to reflect the film's shifting intensity, this drink is as described: Punchy and Assertive.
It's like a espresso martini with layers upon layers of nuance. There's that ebb and flow of spiced rum, white rum and plain old molassic rum notes with an edge of astringency and vanilla from the Licor 43. A bit to take in at first, soome dilution and added sweetnessfrom the lychee granita over time really makes the drink pop.
No Time for Consequences Inspired by No Time for Consequences
Barsol Pisco, grapefruit and coriander seed syrup, agar foam.
Getting its name from the film A Time for Consequences, this cocktail is both crisp and complex.
The first flavor to touch your lips is the light, airy agar foam that really preps the rest of the drink with a creamy silkiness. This segues nicely into a dynamic mix of tart, sweet, and slightly bitter citrus of the grapefruit, interspaced by the fruitier, aromatic Pisco. This is when the pisco breadiness, pear, grape and some nuttiness peeks through. All this is wrapped up with a subtle, floral-earthy spice of coriander.
It's really quite moreish!
House Call Inspired by Port of Call

Bacardí Reserva Ocho 8-year-old rum, dark rum float, house-made ginger soda, sweet citrus solution.
Inspired by the dark, gritty psychological tension in the film noir "Port of Call" , this cocktail is a exciting new twist on a classic Dark and Stormy.
It is a surprisingly rich, spicy, and effervescent experience. The foundation of the aged Bacardí provides deep, complex notes of dried fruit, oak, and caramel that are surprisingly persistent despite everything else added..
On first contact, the dark rum float and its intensity prepares you for what's to come, contributing nutty notes of molasses and spices that transfer themselves from the nose to the edges of one's palate. To prevent everything from being too cloying, the house-made ginger soda works exceptionally well with the sweet citrus solution to form a slightly hot, bright counterbalance, all topped off with a bittersweet acidity.
Monkey City Inspired by Wild City

Monkey 47 Schwarzwald Dry Gin, strawberry shrub, matcha float, lemon.
This rather curious-looking drink gets its name from the eccentric, dark-yet-romantic neo-noir Wild City.
Vibrant, complex, and earthy, are words I would use to describe this drink. That matcha float provides an earthy, bittersweet, and grassy presence that (as one will soon find out) contrasts the fruity notes that are soon to follow. The base of gin, of course, provides a subtle yet intricate botanical profile that includes notes of citrus, florals, and spice. The strawberry shrub ends everything off with a layer of bright, tangy fruitiness with that familiar vinegar kick, offering a sweet and acidic counterpoint.
It really is quite a sweet, earthy yet refreshing drink that works beautifully despite its otherwise unexpected appearance.
Full Strike Inspired by Full Strike

Stauning El Clásico Danish Rye Whisky, peach & pear shrub, sweet vermouth, bitters.
The Full Strike (Name after the comedy action film of the same name) puts a spin on a classic Manhattan.
Subtly smoky, fruity, and bittersweet, this isn't your ordinary Manhattan. Somewhat complex and warming, the base of Staunings certainly provides a robust start. There's those muted but noticeable notes of rye spice, caramel, and a subtle smokiness, which i really quite appreciate.
If anything, I'd say the peach & pear shrub could be more noticeable to cut through the whisky's richness. The vinegar-laced sweetness was noted, but rather overshadowed by the sweet-spicy notes of vermouth.
The texture overall is smooth and curiously silky, with a long, satisfying finish. Not bad, overall!
Dragon Blade Inspired by Dragon Blade
Código Blanco Tequila, house-made grapefruit and melon oolong tea soda, bitter citrus solution.
As expected, it's a nice little package of refreshing, bright and fruity. The tequila is most certainly present, preventing that crisp, clean, and agave-forward profile with notes of citrus and pepper.
This is actually quite beautifully complemented by a house-made grapefruit and melon oolong tea soda. The grapefruit offers a zesty-sweet, citrusy-tart presence while the melon oolong tea adds a subtle, fruity aroma and a smooth, earthy undertone that was quite interesting. Admittedly, I had to chase it somewhat but it really was a pleasant flavor journey that ends on another eye-opening bittersweet punch.
The soda does a nice job at tying everything together and doubles down on that "refreshing" aspect I just mentioned, but I must say that if the flavor of the soda was presented in any other form, it would work equally well. That grapefruit-melon-oolong combination really is quite delectable.

Grant Ashton, a wine collector, founded the first 67 Pall Mall club in London in 2015 with the idea of creating a space to share his collection with other wine lovers.
By 2022, the Singapore club would open its doors in the penthouse of Shaw Centre, quickly becoming a haven and private club for wine enthusiasts. The club boasts Singapore's largest wine list, with a collection of 6,000 bottles and 1,000 wines available by the glass.
