I love trying sake made by a female Toji. In this case, Toji Fujioka Miki from Choshu Shuzo. Although it’s a nama sake, there is only a slight touch of carbonation. There’s also not much of the distinct nama flavor. Instead it is rather mellow and sweet. Notes of banana and sweet rice.
