Notes - Got my hands on a seasonal Hiyaoroshi of Tedorigawa from @oriharasg. At Yoshida Shuzoten, they have about 40 contracted farmers growing 🌾 for them. From spring to summer, their brewers learn how to grow 🌾 and participate in harvesting with the farmers. Additionally the farmers also participate in sake brewing to share their thoughts and ideas.
Brewed with the abundant subsoil 💦 of the Tedori River, this 🍶 is clean and full in the mouth with some aroma of ripe musk🍈. A straight up Yamahai characteristics with layers of complexity. Low acidity coupled with a bitterness that lingers on at the back of the throat for quite some time.
I always enjoyed pairing a Junmai with grilled 🍖 so in this case, satay was what I had with this lovely bottle. I love how the dryness of this 🍶 goes well with the 🥜 sauce and eliminating the oily sensation in the process. The 🍶 also helps to balance out the otherwise overly sweet meat due to the marinate making the satay more balanced and enjoyable. Other options such as yakitori or yakisoba will go really well with this 🍶 too. I was told this 🍶 can be enjoyed warm as well which it will have to wait for the next time as the whole bottle was gone in no time. Quite a good sake from Tedorigawa, will definitely try their other lineups as well.
