Kaze No Mori is one of my fave sake brands. Their innovation in is one of the best and they’re constantly challenging the rules of the game. This bottle is Muroka, Nama, Genshu. Unfiltered, Unpasteurized, Undiluted.
I found this to be fragrant, fruity and complex. A floral scent, very elegant. Plus the effervescent fine bubbles. Always my thing.
It’s labeled ‘807’ for a reason - ’80’ represents the polishing rate of 80% and ‘7’ refers to Yeast No. 7, which explains the lovely scent. If I blind tasted this, I would never have guessed that the polishing rate is so low. Amazing bottle.
