Notes - There are 2 versions of the 25 years anniversary 🍶 by Kaze no Mori and this is the 真中採りwhich is essentially the dripping without any pressure version. The theme for this 🍶 is “5 Kinds of Microorganisms”. Often 🍶 is made using 2 types of microorganisms (koji mold and yeast), however Kaze no Mori decided to use 5 microorganisms for this 🍶 which includes white koji, lactic acid bacteria and another type of yeast.

Together these 5 microorganisms produced a 🍶 that opens with a slight pop due to secondary fermentation and pours out with tiny gentle stream of bubbles. Surprisely smooth but complex in the mouth yet with slight explosive feeling as the tiny bubbles explode within. Slightly citrusy on the tastebud due to the use of white koji but at the same time making it very refreshing and easy to drink especially in our hot weather. A must to drink it chilled to enjoy the fantastic aroma.

Good to pair with fresh sashimi, sushi and shellfish or even just drinking on its own. Although a Junmai, Kaze no Mori always managed to surprise me with their unconventional brewing methods which doesn’t make a Junmai taste like traditional Junmai but more towards a ginjo zukuri. A very limited and hard to come by 🍶 and highly recommended to try if you ever come across. 😊 😊 😊
