Overall - My first bottle of Hakurakusei. Made by Niizawa Brewery which is also responsible for brands like Atagonomatsu which I have tasted and reviewed previously on my IG. Brewed with Yamadanishiki 🌾 polished to 60%, the end product is a light yellow sake with 🍈 and 🍌 aroma. Personally I always have a liking for Tokubetsu (特别), be it a Junmai or a Honjozo. I always have this impression that sake brewery will always do something special to make their Tokubetsu standout from their standard products of Junmai, Ginjo etc.
Being light taste and body but with a medium umami, this sake display a slight refreshing acidity at the finish that helps to create a sharp taste which might make some people feel that the sake is on the drier side. As the length is short, it soon mellows out perfectly without making one feel that the sake is too heavy.
This bottle was paired with the delicious food from Rockon Tokyo which is helmed by the fame Koki Miyoshi San. Food pairing included 10 kinds of Obanzai, Sashimi Salad and Chicken Nanban.
Obanzai is a traditional style of Japanese cuisine native to Kyoto. The Obanzai consist of food from a wide spectrum of umami flavor from simple Edamame to tuna with natto and fresh raw oyster. The sake hit every note with the different dishes making the food more enjoyable and also enhancing the light tasting dishes so that it adds another level of complexity to the otherwise simple taste.
Overall, this is an excellent sake. 😊
