67 Pall Mall Honors International Women's Day With Special Collaboration Between Fotia's Chef Sofia Beleri and 67 Pall Mall Sommelier Team

 

In celebration of International Women's Day, 67 Pall Mall is putting together a special collaboration lunch between Chef Sofia Beleri of Fotia and its very own in-house sommelier team, paying homage to the women shaping their fields through both food and wine. 

On March 8, the club's members are invited to the a la carte brunch from 11 am to 2 pm, available only through reservation.

With over a decade of experience as an executive chef in Athens, Sofia Beleri is the visionary behind Singapore’s Fotia. Located in Duxton Hill, her restaurant is a tribute to authentic Mediterranean tradition, where every ingredient is crafted from scratch.

Under her leadership, Fotia earned the 2024 Gold Award for Authentic Greek Cuisine from Greek Taste Beyond Borders, recognising its commitment to sustainability and the preservation of Greek culinary heritage.

The menu will include:

  • Handmade Spanakopita
    • Hand-rolled phyllo, spinach, spring herbs and feta. Served warm with cool mint yogurt.

  • Kagianas Peinirli
    • Warm peinirli bread cradling slow-cooked tomato, silky Greek cheese and roasted Florina peppers, finished with one softly baked egg on top. 

  • Smoked Eggplant and Beef Cheeks
    • Fire-smoked eggplant purée. Slow-braised beef cheeks in a rich tomato sauce, finished with parsley oil.
  • Bougatsa Cream
    • Crispy phyllo pastry filled with warm vanilla semolina cream, finished with icing sugar and cinnamon.

To complement the brunch, a focused wine-by-the-glass program spotlights three pioneering female winemakers defined by their mastery of terroir:  Athénaïs de Béru from Chablis, sisters Meike and Dörte Näkel representing Germany’s Ahr Valley, and Vanya Cullen of Margaret River.

The wines, also available throughout the month of March, include:

  • 2023 Château de Béru, Chablis "Terroirs de Béru" ($17.50/gls)
    • Crisp and precise, with notes of citrus peel, white flowers, and wet stone. A Chablis with vibrant acidity and a lingering mineral finish.

  • 2019 Meyer-Näkel, Spätburgunder, Dernauer "Grauwacke” ($27.50/gls)
    • Elegant and layered, showing red cherry, wild strawberry, subtle spice, and sandstone-driven minerality.
  • 2023 Cullen, Cabernet Sauvignon-Merlot, Diana Madeline ($$32.50/gls)
    • Refined and energetic, with dark berries, graphite, fresh herbs, and gentle oak. Balanced and expressive, offering power through precision and length.

67 Pall Mall Singapore will also be contributing an exclusive auction item in support of the Singapore Council of Women’s Organisations (SCWO) Gala and Singapore Women’s Hall of Fame Induction, taking place on 27 March 2026.

The auction item is a Private Dining Experience for 10 Guests at 67 Pall Mall, featuring:

  • Private dining session for 10 guests in the 67 Pall Mall Clubroom.

  • A guided tour of the Club for the winner.

  • 4-course dinner featuring 67 Pall Mall classics, curated by Executive Chef François
    Mermilliod.

  • Wine pairings selected by 67 Pall Mall sommeliers, who will also be showcasing wines at the event.

  • Private dining with Orchard skyline views.
