Notes - This is a Spring seasonal release 🍶 of Tenbi, usually from Feb-Mar. It was first introduced in 2021 and the response was so overwhelming that Tenbi decided to continue introducing this 🍶 every year. Added with a slash of sake lees and allowing 2nd fermentation in the bottle, the 🍶 opens with a pop and sends the stopper flying out (almost hitting my friend). Light and zesty in the mouth with micro bubbles dancing on the tongue. Creamy ricey notes from the Koji 🌾 and lots of lovely fruity aroma can be felt. Medium acidity and ending off with a slight bitterness reminiscent of grapefruit pip. Very mellow and easy to drink even on its own.

This 🍶 is an immediate hit with lady drinkers even for those who have not tried or like 🍶 before. It is also easy to pair with food due to its zesty and tingling nature. Very good to complement dishes like salad, cold tofu, sashimi and even deep fried food. Although Tenbi only started producing 🍶 again in 2019 and with only a few regular selection, the popularity of their 🍶 has been sky rocketing. Perhaps this is due to Toji Fujioka (Head Toji) who has been involved in sake brewing in Nara and Mie Prefecture for 20 years and have served under Shimizu Seizaburo Shoten (the brewery behind Zaku 作). I look forward to seeing more new releases from Tenbi and savoring more delicious brew by Toji Fujioka.
