Overall - Tatenokawa has produced many good sakes and this is one of them. Brewed with Sake Yeast Society No. 9 yeast and Yamadanishiki polished to 50%, this Junmai Daiginjo sake is full of fruity aroma which consists of 🍑, lychee and 🍏. Giving off a very refreshing and crisp note when you put your nose near it. Light tasting with medium umami and a medium length, this sake is good to pair with lightly fried food like tempura or a fried Hon Maguro collar. Being also medium dry and light in texture, I will be adventurous to also try and pair it with fried stinky tofu 臭豆腐 if I’m back in Taiwan. Unfortunately as I’m clearing my leave for the next 3 weeks and having no traveling plans due to Covid, I’m just drinking the sake on its own with Doritos spicy nacho chips. The sake is clean and crisp and smooth down the throat and the fruity aftertaste will continue to linger on for awhile. Highly recommended to have it chilled at around 12C to savour all the fruity notes and the smoothness of this sake. For people who are not familiar with Tatenokawa, this is definitely a good bottle to start.
Overall, this is a very good sake.
