Overall - 1 of 5 bottles specially curated by Orihara Shoten. Brewed with Dewasansan 🌾 from Yamagata prefecture at 33% polishing, the aroma is full of 🍌 and 🍑 with a slight whiff of vanilla. The taste and body is on a lighter side which matches the medium umami. Somehow I kind of like sake with medium umami to pair with light taste and body as I feel that it will emphasize the umami further without the taste and body overpowering it. The medium length also helps to emphasize the umami by letting the umami linger at the throat longer. This sake is a medium dry sake which is good to pair with most food. I paired it with Genki 🍣 and cheese and cold cut platter from Wine Connection Cheese bar. It really goes very well with the Gorgonzola cheese and Serrano ham as both these food are fuller flavor as compare to the sake. Most of the time if the pairing is between a light sake and heavy flavored food, it will usually make a very good combination.
Overall, this is a good sake.
