Full flavored and round. I found it sweet with a hint of bitterness, like a sweet grapefruit. Tasted so different from a typical Daiginjo sake because of the Omachi rice.
Omachi is known as the grandfather of sake rice, an heirloom rice strain that almost went extinct. It’s now widely cultivated in Okayama.
