Overall - Ohmine is another brand of sake that is on my favorite list. This time trying a bottle of 3 Grain Namazume Hiyaoroshi. Namazume means that the sake is heat treated after pressing and before storage. Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in the autumn months.
This sake is brewed with Yamadanishiki 🌾 polished to 55% and is full of fruity fragrance of snow 🍐, white 🍑 and lychee. The light taste and light body makes the sake well balanced giving it a smooth and clean taste. This sake is definitely a Kun-Shu due to the ample fruity fragrance which I can taste in every sip. With light umami and a short tail, this sake will make good combination with a lot of food.
I paired it with fresh sashimi and Japanese pickled bean sprouts. This sake really compliment the sashimi and enhances the freshness of the raw fish. Another dish I can think of pairing with this sake is Japanese 🍢 with bonito soup base. Best to drink it chilled using a wine glass in order to enjoy the aromatic fragrance.
Overall, this is an excellent sake.
