Overall - Another awesome bottle of Ohmine seasonal hiyaoroshi sake which is brewed with Omachi 🌾. For some reasons, I enjoy sakes that are made using Omachi vs Yamadanishiki as Yamadanishiki is too common. Polished to 50%, this sake has the fragrance of 🍌 and yet at the same time having the aroma of yoghurt drink mixed with steam 🍚. Overall it gives off a very refreshing scent.
Although a Genshu 原酒, the alcohol is only at 13% which is definitely much lower than the usual 16-18% found in other Genshu. Most sakes nowadays are watered down either with water or brewer’s alcohol in order to reduce the alcohol % to around 14-16% so you can imagine the exhaustive production process taken to brew this sake and get the alcohol level to 13% without the need of watering.
As a light tasting sake with medium sweetness, this sake will make good pairing with dishes that are simple and light such as thinly sliced hotate carpaccio, fresh uni with caviar, Japanese salad or even tofu with ikura. As the umami of the sake is light, it will not overpower the taste of the dishes and yet compliment them. Best to serve chill using a wine glass at around 12c to savor the best of the fragrance.
Overall, this is yet another excellent sake from Ohmine.
