Notes - A limited seasonal nigori which is inspired by “Yuki Onna 雪女“ who is a spirit in Japanese folklore. With undisclosed Seimai Buai, this bottle opens with a loud “pop” and immediate 🫧 racing to the top of the bottle. Silky and dancing on the tongue with delicious notes of 🍊 and 🍈. Smooth and coupled with a refreshing zesty sour finish that is great as a first bottle to awaken the palate. Although a nigori but the aroma is more towards the 🌾 rinsing 💦 before one cooks the 🌾.
Food pairing was with dinner over @nomidiningbar.sg and I was taken care of by Mr Jack Lau. A 🍶 this light and refreshing definitely have to go with light dishes in order to maximize every bit of the taste and aroma and you can never be too far wrong by pairing with thinly sliced fresh sashimi. I have to stress that the sashimi have to be very fresh so that it will not tint the 🍶 and white fish sashimi will make the best combination with it. The kinmedai and tai that was served really goes very well and the 🍶 helps push the freshness to another level. It really makes me feel like I’m enjoying a fish freshly out of the 💦. Of course, this 🍶 have to be enjoyed chilled. Even without disclosing the Seimai Buai, I kind of second guess that it has to be at least a ginjo to have such taste and aroma.
Overall, this is an excellent 🍶 from 1 of my favorite brewery. 😊 😊 😊
