Notes - First glass of 🍶 pairing at dinner @ginza_hassen. Brewed with a local Aomori 🌾, Hanaomoi, polished to 40%, this 🍶 is smooth and yet carries some weight as it dances on the tongue. Some dryness can be felt as it slides down the throat and ending with a subtle bitter tartness. Gorgeous ginjo aroma can be experienced when it first enters the mouth and slowly fading away to become more of a grapefruit fragrance.

The dish that was presented with this 🍶 was Kowan, which is a savory soup with an ingredient which resembles fish paste. The soup is slightly umami as it was brewed with dashi and the 🍶 helps to balance it by adding a little citrusy flavor to it. A good pairing and a great start to an enjoyable evening.
