Notes - Hassen which means the Eight Immortals (八仙) which originated in ancient China. Stories about the Eight Immortals and their earthly exploits often detail the delightful ways in which they enjoyed drinking their favorite wine and spirits. Hachinohe Shuzo named their sake “Mutsu Hassen,” which means the Eight Drunken Immortals of Tohoku, after this legend.
Hachinohe Shuzo only uses selected 🌾 and yeast made in Aomori and thus this 🍶 is brewed with a unique 🌾 known as Masshigura. Straight and crisp in the mouth with a subtle creaminess that you will get from slurping thick 🍲. Fruity aroma is evident and yet including a hint of fresh 🍚. Low acidity with a medium dryness that rounds off with a slightly sweet aftertaste. Lots of complexity and depth in this Ginjo which makes it more enjoyable than those straight forward ones.
Managed to pair it with home cooked truffle 🍝 which the 🍶 really goes a long way in helping to enhance the freshness and aroma of the truffle 🍄. It is also super easy to drink on its own without any pairing needed. We finished the whole bottle in 1 seating.
This is definitely one of my favorite label from Mutsu Hassen. 💥💥💥💥
