Konohanano Sakuramochi Doburoku

Rice: Glutinous Rice; ABV: 17%

Tasting notes from @omunomu.sg are on point with this.

“A robust, mature and sweet doburoku with deep notes of sakura wood, pickled greens and umami altogether.”

This sake had depth and complexity to it’s flavour with strong herbal-ish notes which I liken to chinese herbs (in a pleasant way).

Was expecting it to be sweeter but the earthiness from the barrel aging and the pickled sakura leaves really brings out that depth and offsets the sweetness you’d expect from your typical mochi.

Also, because the brewery used mochi rice instead, you get that slight chewiness / stretchy rice texture you’d expect.

Definitely worth dropping by and giving it a go! (If they still have it in stock…🤭) I hear the kanzake version is very promising although I have yet to try it. 🍶
