Overall - Was having dinner at the Sushi Bar and decided to order a 300ml bottle of the Kikumasamune Kimoto Namachozo to go with some sashimi and Ehiire.
Kikumasamune has been producing sake using the ancient method of Kimoto and only a handful of breweries in Japan are doing right now as it is time consuming and results can be unpredictable. At Kiku Masamune, they are dedicated to produce crisp and dry sake using the Kimoto method and Kiku-Masamune's dedication to dryness is explained by the fact that dry sake is ideal as an accompaniment for cuisine, whose flavor it enhances. As such Kiku-Masamune will continue to pursue the ideal of authentic dry sake with a refreshing flavor that is free of impurities and a crisp, clean finish that perfectly complements all styles of cuisine.
This sake is light in taste and body with the aroma of Brie, steam 🍚 and 🍌. Being medium dry and with a medium length, it has a smooth and clean finish. A characteristic of Kiku Masamune sake. This sake will make good combination with traditional Japanese cuisine such as sushi, sashimi and Yakitori. Although this sake is towards medium dry, it won’t feel too dry at the palate just nice enough to have a whiff of the rice fragrance with every sip.
Overall, this is a good sake.
