Overall - My first bottle of 開運 and I hope I can really 開運 😂. The outer box and the bottle are nicely designed with multiple colors to signify it as a congratulatory 祝酒 sake. This sake is full of flavors and aroma of 🍌, cotton candy and steam 🍚. This is also a namazake which means raw or non pasteurized sake so it needs to be stored cold and drink chilled to enjoy the best of flavors. The medium taste and body matches the level of umami and makes it very well rounded. Although at alcohol 19%, it didn’t feel too dry on my palate. The length is medium and sufficient enough for the taste to linger at the back of the mouth. This allows me to savor the remnants of the steam rice flavor. I had it chilled to around 7c using the tokkuri that I just bought which allows me to put ice cubes in the center to chill the sake. I paired it with a Japanese bento which consists of some negitoro, uni, tempura, oden and sashimi and the sake really goes well with all the different food. It is like a battle inside my mouth with different food and sake trying to be the most outstanding pairing. This is a sake that can be paired with most food.
Overall, this is a very good sake.
