Overall - A seasonal sake from 上善如水 which is freshly squeezed and only available in November/December. Made with new rice harvested in Autumn. It is also a sake for celebrating the New Year. The bottle used for this sake is light blue in color with printing of ❄️ which makes it suitable as a gift. This is also a raw or namazake as it did not go through any heat treatment and thus preserving the fresh taste of the sake. The first aroma that greeted me was 🍌and vanilla which is atypical of a ginjo-shu. The taste and body is light largely because it doesn’t go through weeks of storage after production but this is what makes it refreshing. The medium dry sweetness compliments the medium length of the aftertaste and at the same time the level of umami is just right for this sake. As it is a raw sake, it needs to be consumed chill/cold to bring out the best of taste. Being light tasting, it is easy to be paired with most food. I paired it with negitoro 🍣 which was made from otoro. The sake mixes well with the fatty tuna and elevates the texture and taste of the tuna. Highly recommended for anyone who wants to try a raw or namazake and this is also light enough to be drank on its own and is similar to a Pinot Grigio if you are a white wine lover.
Overall, this is a very good sake.
