Overall - Have always like sakes brewed using Asahi 🌾, therefore decided to give Ishichi Asahi Junmai Ginjo a try when decided to order a bottle during dinner at Boruto. This sake is medium dry but pack with fruity aroma of grapefruit, 🍌 and 🍑. The taste and body is light which makes this sake falls in between the Kum-Shu and So-Shu category. With a light umami and coupled with a medium tail, the sake helps to pave the way for stronger flavored food. After the raw wagyu beef and caviar starter, I paired it with sliced truffle ikura Sōmen and seared tuna tataki with passion fruit sauce. The sake complimented the food and at the same time didn’t overpower them. Great selection of sakes by the sommelier at Boruto.
Overall, this is a good sake.
