Notes - Nestled at the foot of Mount Hakkaisan located at the southeastern Niigata Prefecture and with abundant underground water from the melting snow from the mountain, lies the humble Hakkaisan Brewery. Using modern technology coupled with manual labour has always been the principle of sake brewing at Hakkaisan Brewery as they believed sake can only be perfected with human intervention.

Brewed with Yamadanishiki 🌾 and using Gohyakumangoku 🌾 as the kojimai, this sparkling sake is bubbly with massive grapefruit taste exploding in the mouth. Some bitterness that resemble that of citrus peel and the sourness of a 🍏. Smooth and light on the palate with a sweet aftertaste that lingers for a while. Very refreshing as a starter drink to the night.

This sake will greatly serve as an aperitif with some starter dishes like pickled kyuri 🥒, spicy mentaiko roe and pan fried hanpen. It can also serve as a good replacement to sparkling wine and it also carries more depth and flavor. Best to finish the whole bottle once open to retain the bubbly.
