Overall - Decided to try a bottle of Bijofu Tokubetsu Honjozo this time as I’m quite impressed with Bijofu’s sake thus far. Served at Hanabie (10C), the aroma is full of almond jelly, lotus paste and snow pear, giving me the indication that this sake might be on a sweeter side. First taste and I find that the taste and body is light and airy with medium sweetness. The light umami and short tail compliment the simple texture of this sake. Next, I decided to try it warm to Nurukan (40C) using my Chirori in a water bath as the label on the sake indicated that this sake is also good to drink warm. The obvious difference when it is warm is that it became much mellower and it is smooth and pleasant down the throat. The aroma when warmed is that of wet 🍚 and alcohol. The sake has also become medium dry due to the warming. Personally I prefer this sake when it is warm. This is a fairly easy to pair sake and will go really well with thinly sliced Tai or wagyu beef with onsen egg. This sake is easy for beginners who are new to sake or a Honjozo. This is also good for sake lovers who are into warm sake.
Overall, this is a very good sake.
