Overall - Another bottle in the Bijofu 美丈夫 series. This was highly recommended by a friend who is relatively new to sake. First nose and the smell of🍈 is clearly evident in this sake. Followed by a whiff of 🍑 and 🌹. The taste and body are light and airy with a slight low-medium umami which works really well. Don’t think the sake will be balanced if the umami level is anything above medium with such a light body/taste. The sake is on the medium dry side with a tartness and slight short sharp ending tail which resembles that of biting into a citrus fruit. Had it chilled around 13c and paired it with Kuriya take home sliced sashimi and Putien Xing Hua beehoon. The sake goes really well with the beehoon as the beehoon is stronger in flavor and the sake can enhance the flavor of the beehoon. However it is not the case for the sashimi. Probably this is due to the not so great quality of the sashimi from Kuriya. I’ll give Kuriya sashimi a miss in future. This is a good value sake to try.
Overall, this is a good sake.
