Overall - Another bottle from Bijofu. This time a Tokubetsu Junmai. Having tried 4 different bottles of Bijofu so far, I am quite impressed with their sake quality and texture. The aroma of this sake is clearly evident of 🍈 and lemon barley water. The lemon barley water aroma is a childhood memory whereby most of us born in the 80s are super familiar with as I could have swear I drank that at least 3 times a week. You can still find this lemon barley water in most local supermarket. The medium umami is good with the light body and taste but I would rather the body to be on the medium side to add more robustness to this sake. However the medium tail makes up for it so that I can still taste the reminiscent of this sake even after I have swallowed it for quite some time. All the Bijofu that I have tasted before are all brewed with Matsuyamamitsui 松山三井 🌾 which is not commonly used in sake brewing. I think this is the reason why Bijofu sake has a unique flavor which I thoroughly enjoy a lot. I paired it chilled with home cooked tenderloin and stirred fried garlic broccolini. It really makes a good combination with the tenderloin by enhancing the meaty flavor and the juiciness of the meat. This sake is recommended to pair with strong flavor food like Korean bbq meat dishes, 辣子鸡,truffle beef hor fun.
Overall, this is a good sake.
