Overall - It has been 4 weeks since my last posting and also my last sake tasting largely due to my Covid booster shot and my dental surgery which put me on 2 weeks of antibiotics.

Been sometime since my last bottle of Bijofu. This time a seasonal Autumn sake gifted by the nice Maria-San of Orihara Shoten. Brewed with Matsuyamamitsui 🌾 which is commonly used by Bijofu, this sake has strong aroma of musk melon, 🍌 and faint smell of diluted barley water.

With a medium in all aspect of the tasting notes and a medium dry taste to it, this sake does make you feel that it is autumn and the weather is turning into winter soon. The sake is smooth on the tongue with a dry aftertaste down the palate symbolizing branches turning dry during winter season. The medium umami also helps in the pairing of food especially towards hot and soupy food that helps to keep the body warm during your change of seasons. As it was almost Chinese New Year in Singapore, I paired it with a “盆菜”. It is like a starchy braised stew with mushrooms, dry oyster, abalone, fish maw, roast pork etc. As the food was heavy rich in flavor and texture, the sake helps to remove the starchy and oily feeling, making it less “Jelat” so that we do not waste the expensive food. I would also recommend pairing it with hotpot during CNY reunion dinner.

Overall this is a good sake.
