Azumatsuru “Spin-off” Junmai NG

ABV: 15%; RPR: 70%
Rice: Shunyou
Prefecture: Saga

This is the 3rd sake that I’ve had the pleasure of getting to taste by Azumatsuru and I must say it has consistently impressed me. Modern, slight funk yet impressive.

Also, the second sake that I’ve had using the Shunyou rice which apparently is a low GI rice used by the Japanese hospitals. 🏥

This sake first gives a very nutty aroma🌰🥜 but when it starts to open up, you get this amazingly fragrant ripe strawberry🍓, jam aromas right up your nose. (Other tasting notes that are supposedly present: lychee, muscat, raw pineapple, pink guava)

On the palette you have this nice sweet tartness and it finishes off with this coconut vanilla ice-cream rounded flavour. So juicy. 😋

What makes this sake🍶so beautiful is the aromas don’t fully match the flavor profile but it keeps you going back for more. Watch how the flavor opens up as you let it’s temperature rise.

If this were the last sake I’m drinking this year (which I’m probably not), I’d say it ended off pretty well.
