Overall - Brewed with 2 kinds of sake rice, Yamadanishiki and Gohyakumangoku, polished to 58%, this sake display the aromatic fragrance of both fruitiness and nuttiness. Fragrance of lychee and 🍌 is evident on the first 👃 but as it warms up a little slightly around the range of 15c, the aroma of barley water and almond nuts starts to emerge. Not too overwhelming but just a hint of them. Kind of reminded me that this is a Junmai Ginjo sake which should display both the aroma of the Junmai and the Ginjo family. More often then not, you will get a Junmai Ginjo with abundance of fruity aroma and probably steam 🍚 and not much nutty aroma but this sake is different. Some facts of this sake is that both the Yamadanishiki and Gohyakumangoku is brewed separately and then pump directly to be mixed together and the mixture is pasteurized once. The umami is light with medium taste and accompanied with a light body. Being medium sweet and short length, it is highly recommended to pair with savory dishes. I paired mine with American deep fried chicken with waffles and hot sauce. The sake really goes well with deep fried food as it is light and removes the oily aftertaste from the fried chicken. This sake will also be well liked by most ladies as it is on a sweeter side and easy to drink. Highly recommended for beginners new to sake drinking.
Overall, this is a very good sake.
