Overall - My first bottle of Aramasa sake. Have seen a lot of IG posting on Aramasa but they are not easily available in Singapore until I chance upon it when having dinner at Kamoshita. Asked the famed sake sommelier at Kamoshita, Koki Miyoshi San, what is the difference between the R-Type and the S-Type and was convinced to try the S-Type as it is considered to be more premium and smooth.
Brewed with No.6 sake yeast and 100% local Akita 🌾 polished to 55% and using the traditional and labour intensive Kimoto method of preparing the yeast starter, one can smell many different fruits such as 🍓, 🍑, nectar and even wet 🍚 for this Junmai sake. There was also a slight bubbly fuse when I first popped open the bottle.
Although a Junmai but the taste and body is fairly light with light umami as well. A huge difference from the usual Kimoto Junmai whereby the taste and umami tend to be medium. I paired it chilled with the delicious food that Kamoshita have to offer such as freshly sliced sashimi, 🐙 coriander, assorted 🍢, deep fried puffer fish karrage. As the sake is so smooth and well rounded, it goes well with all of the dishes that we had that night. The richness when the sake touches the mouth and the sharp contrast it made when swallowing are very attractive. This is a sake that is easy to pair with most food. Having said that, I will love to try other series of Aramasa sake.
