
Monkey 47 has decided that the 48th botanical defining this year's Monkey 47 Distiller's Cut is to be the German oyster mushroom.
Crafted in Southern Germany’s Black Forest, Monkey 47 drew inspiration for its 16th Distiller’s Cut from the historic Wilhelmsburg fortress in Ulm, located just a stone's throw from the distillery.
The oyster mushrooms were found within the fortress’s cellar spaces, which apparently offered the ideal conditions for the mushrooms to grow sustainably. The brand then sourced the mushrooms from local company Burgpilz, adding the unique fungus to its maceration and distillation process.
The mushroom is said to bring a savoury complexity to the gin with its umami profile.
Encased in a metallic-trimmed brown label that echoes an oyster mushroom's texture, the bottle features a gold-coated cork ring engraved with Monkey 47's signature motto ex pluribus unum ("one out of many") and arrives in a custom, FSC-certified gift box.
Each year, the Pernod Ricard-owned house seeks out a singular species rara to complement the 47 botanicals of its flagship recipe, culminating in the highly anticipated Distiller’s Cut. This year's edition follows on the heels of last year's sea salt based expression, which was sourced from the pink salt marshes of Camargue in southern France.
Bottled at 47% ABV, the expressionis available at an MSRP of €79.95 (US$89) per 500ml bottle.
