Ramos Gin Fizz

 

 

After many attempts and several tutorials, I finally achieved the coveted Ramos foam. Though they would be impractical while actually tending bar, you can follow my fool-proof steps to make your own at home!

1.75oz GIN (@plymouthgin)
1oz FRESH LEMON JUICE
3/4oz 1:1 SIMPLE SYRUP
3/4oz HEAVY CREAM
1oz SODA WATER
5 drops ORANGE BLOSSOM WATER
EGG WHITE

•Pour a splash of soda water into your collins glass and place in the freezer
•Combine ingredients, except soda, in shaker
•Take the coil off of your hawthorn strainer and put it into the shaker
•Vigorously dry shake to aerate the egg and whip the heavy cream
•Add a large rock of ice and shake for about 2 solid minutes
•Double strain into collins glass on top of soda
•Place back in freezer for up to 10 minutes
•Slowly pour soda water into glass and watch the foam rise
