Notes - Sensho Masamune is one of the 3 brands that is brewed under Katsuyama Supreme Sake. Katsuyama is a sake brewery with a tradition of well over 3 centuries and was created to brew the top class 🍶 enjoyed exclusively by the feudal lords of the Sendai Domain, founded by 🇯🇵 most famous military commander and respected samurai, Date Masamune.

This is a Tokubetsu Junmai pressed using the traditional bag pressed method. Light and airy in the mouth with apparent unripe 🍍 aroma. A gentle sweetness can be felt as the 🍶 swirls and dances on the tongue. A hint of spiceness can be felt as it goes down the throat and leaving behind a slightly burning bitter sensation.

This is the 1st time that I tried their 🍶 and I felt that it has the necessary depth and layers that I would expect from a brewery that specialized in brewing Junmai Shu. Food pairing wise would be something like Yakitori or Yakisoba or even kimchi stew. I also did try the 🍶 warmed to about 50c and the texture became rounder and much fuller. Honestly I prefer the warmed version better. ⚔️⚔️⚔️
