Got this from Sake Meguri as I loved how this tasted in comparison to the 2011 brew. Would have missed out on this gem if not for @alexdrinkscraftsake pointing it out to me.
Really liked this one as it was a good balance of sweet and umami. A slight sweetness that gives the flavor that roundness.
Also got to learn from Alex and @jujugohan about how the koji caramelising causes the flavors to evolve over time from sugar-ish to caramel to a honey like flavor.
That will probably take a long time, but this is one definitely meant for the shelves and to forget. 🤭
