Notes - Koueigiku is one of the latest 🍶 brewery that was established during the last 2 decades. Their 🍶 profile are usually muroka nama genshu so as to present the freshest taste to 🍶 lovers and I have to say that they are very good at this technique. This 🍶 is matured at a very low temperature for 8 months before bottling to create a balanced and well rounded 🍶 that carries a lot of 🍏 and muscat aromas on the nose.
The bottle opens with a slight escape of gases due to it being a namazake. Smooth and gentle in the mouth with lots of fruity and nutty aroma. The sourness deriving from lactic acid is quite evident as well which helps to balance the sweetness of the 🍶 by providing a touch of citrusy taste to it. I like how the taste became full and rounded as it slides down the throat resembling ripe🍈 or 🍇. Although the polishing was undisclosed by the brewery, somehow I felt it should be around the Ginjo or Daiginjo grade (50-60%).
I paired it with some hard 🧀 and ibburigakko with crackers which makes a very good combination due to the slightly sour nature of the 🍶 and the additional lactic acid from the 🍶 adds another layer of cheesiness to the 🧀.
Another good offering from one of my favorite brewery. Looking forward to tasting and reviewing more of their 🍶.😊 😊 😊
