Notes - Koueigiku Shuzo was established in 2019 and is one of the first “new” 🍶 breweries in 🇯🇵 in over 2 decades. The brewery was set up by 2 friends who worked outside the 🍶 industry and they have been partnered with the very talented Katsuaki Yamamoto as Toji. Yamamoto-san is one of the most talented young Toji in the country and he was the man behind the very popular “Kikutaka” brand of 🍶. Koueigiku have set incredibly high standards for the quality of 🍶 that they brewed.
This is a nigori 🍶 and it popped open with gases trying to rush out. I had to cap the bottle back a few times in order to prevent any spillage. Imagine the amount of gases within due to the 2nd fermentation in the bottle. As a nigori 🍶, you can still see quite a fair bit of 🍚 particles left at the bottom and it looks like snowflakes when you shake the bottle.
Light and sparkling in the mouth with lots of fizzling sensation. A medium sweet soury taste can be felt as it lingers in the mouth but dissolved away into a grapefruit bitterness once you swallowed it and leaving behind a lot of citrusy aroma of 🍋 and 🍊 with reminiscent of 🍚. Brewed using Omachi 🌾, this 🍶 has lots of depth and texture and can easily be enjoyed on its own. It is also highly recommended to have it chilled at around 4c. I would also pair this with lightly seasoned white fish so as to enjoy the best of what this 🍶 has to offer. ❄️ ❄️ ❄️
