Overall - A seasonal fresh summer sake by Masumi. Brewed with Miyamanishiki polished to 55% and raw (not pasteurized), I can see a bit of bubbles when I first open the bottle. This sake is also brewed using Masumi No. 7 yeast which is also Kyokai Kobo No. 7. This yeast was founded by Masumi in 1946 and is the most popular yeast strain in use today and also help Masumi to many awards in the past. Due to this yeast, the sake is evident of 🍌 and musk 🍈 aroma. Had it chilled at around 14c as it is a namazake. The taste and body is light which matches the light umami. The sake is slightly mellow and very smooth with a clean short finish. It has a sweeter note and will be very welcoming for beginners to sake. This summer sake is also good for the all year long summer season of Singapore. The taste is very refreshing similar to the aftertaste of a 🍋 sparkling drink. As this is a namazake with a clear transparent bottle, it is best to finish the sake in a single setting to fully enjoy the freshness of it. This sake will make excellent combination with summer dishes like fresh salads, grilled meats and thinly sliced sashimi. I paired it with thinly sliced Kinmadai from Hokkaido with truffle shavings. Due to the strong flavor of the truffles, it helps to elevate the sake to another level by adding more umami to it. Excellent pairing. This sake is also highly recommended for ladies venturing into sake drinking as the taste is quite close to a Riesling
