Notes - 夏の夜空 is a seasonal summer sake that is released in early summer and meant as a refreshing drink for warm summer nights. Last year, the alcohol content is at 10% but this year they decided to increase it to 11% to balance the drinking comfort and fullness of the taste. It is truly amazing how they can developed a Genshu (no dilution) with such a low alcohol content. 夏の夜空 is also prepared using the Bodaimoto 菩提酛 method which is the oldest production method whereby lactic acid is derived naturally by soaking 🌾 in 💦 for 2 days creating a lactic acid fermented water called Soyashimizu which is later added to the Shubo. The design of the bottle is printed with Scorpio ♏️ shining down on the Kaze no Mori pass in midsummer.

The bottle opens with a slight effervescent escaping. Slightly sparkling and tingly in the mouth that resemblance drinking a Prosecco. With every sip, you can feel the smoothness sensation of the 🍶 like silk on your body. Every mouthful is full of lychee and momo 🍑 aroma and ending with a natural sweetness of 🍯 with a tiny little bit of sourness from the lactic acid.

This 🍶 was enjoyed with 🍣 and sashimi to fully savor the delicacy and intricacy of the 🍶 and yet at the same time the 🍶 helps to add a natural sweetness to the food. Prefect combination where you can taste the original flavor of the 🍶. I loved the fact that this bottle is 500ml because it will mean I can finish it alone once it is open. Looking forward to more creation from 風の森.
