Notes - Hououbiden is good at producing high quality 🍶 with characteristic of fresh and fruity ginjo aroma. At Hououbiden, they value the connection with 🍶🌾 producing regions and 🌾 farmers throughout 🇯🇵 including Tochigi prefecture. As such they have direct contracts with 🍶🌾 production region. Hououbiden uses the ground 💧 from Mt Nikko’s water vein to brew their 🍶.
This bottle is a hiyaoroshi 🍶 where the 🍶 is brewed in Spring and went through 1 round of pasteurization after pressing, stored in low temperature during summer and then bottled and released during autumn. Therefore hiyaoroshi 🍶is also a Namazume (生詰). Full and well balance in the mouth with subtle 🍚 aroma which is typical of Gohyakumangoku 🌾. A feeling of richness can be felt within as the 🍶 enveloped the whole mouth. A slight gentle sweetness coupled with some spiciness and bitterness as it slides down the throat and leaving behind a clean and short finish.
Hiyaoroshi is often good to drink on its own or paired with autumn dishes such as 🦀, matsutake 🍄 and even autumn sashimi. Kampai. 🍁🍁🍁
