Hioki Sakura Junmaishu Toki no Kiwami Heisei 6BY (1994)

Magical find with this 30 year old aged sake. Had it at both room temp and warm.

Gentle, yet intense at the same time. It had subtle umami earthy (mushroom) notes 🍄🟫 A slight smokiness that reminds me of whiskey.

After having my first sip, I could feel the depth that comes with ageing and it is definitely one of those sakes that warm your heart. I could also feel my body warm up slightly after (hence the whiskey feels).

Warming it up, brings out the sweetness and opens up this sake more.

If only they had it in 720ml bottles! 😭
