The Beast of Dufftown, Speyside distillery Mortlach, has announced the launch of a brand new collection of whiskies, called the Neverbound series. The first expression, called The Mortlach Neverbound Release 01, is set to be followed by annual releases every year going forward.
Mortlach's Master Blender Dr. Craig Wilson has said the The Mortlach Neverbound Release 01 was created in a way to bring about a "new dimension of savoury flavor, while lending it a syrupy, deeply textured mouthfeel."
The distillery employs its iconic 2.81 distillation technique to create this expression. After distillation, the spirit is matured in French oak casks that were air-dried for four years at a cooperage in France’s Cognac region. The process was said to temper the harsher edges of the wood influence, allowing the whisky’s umami character to shine.
