Daniel Weller Continues Wheat Exploration With Spelt Wheat Recipe Kentucky Straight Bourbon
Two years ago, Buffalo Trace dropped something incredibly special - a tribute to its founding history and a unique exploration into the very base material of its famed Bourbons, the Daniel Weller Emmer Wheat Recipe.
Whilst the Weller line-up is already highly lauded for being some of the best - and by some estimations, the best - wheated Bourbons, there's up till then been less inspection into the effects of the type of wheat used, which would stand to reason as being highly crucial given its specialty wheated mashbill.
And so in paying tribute to Daniel Weller, the grandfather of THE William Larue Weller, the idea here was to explore particular varietals of wheat, starting first the the ancient Egyptian grain that is Emmer Wheat.
Excitingly, it seems like the Daniel Weller Wheat series continues with now a second release, this time focusing on Spelt Wheat!

Rediscover The Past
In 1794 Daniel Weller, the grandfather of William Larue Weller, left Maryland and made the long voyage down the Ohio River. Daniel traveled with his wife and children, ultimately settling in Kentucky where he would continue the family tradition of distilling.
Our spelt wheat recipe is inspired by Daniel and his pioneering spirit. Rarely seen in modern day stills, spelt wheat is an ancient European grain known for its long history in traditional bread, pasta, and other baked goods.
This bottle is a tribute to Daniel, the trail blazer of the Weller family.
Now going back to our agricultural digging, we find that Spelt Wheat is a hulled ancient grain and primitive relative of modern wheat, best known for its distinctive nutty and sweet flavour, where it has been cultivated for thousands of years and has been used historically for bread, pasta and other baked goods as mentioned. Whilst the wheat variety originated from Europe, and primarily Germany, Switzerland, Austria and Italy, it has since been grown in small parcels in the US, in Ohio and Washington.
The new Daniel Weller Spelt Wheat Recipe looks to be bottled at 94 Proof (or 47% ABV), and remains classified as Kentucky Straight Bourbon Whiskey. It might also be worth noting that if the first Daniel Weller Emmer Wheat Recipe is anything to go by, expect the new Daniel Weller Spelt Wheat Recipe to be released at an MSRP of US$500.
