Exactly what it should be, ultra refreshing, it will be a perfect one when topped off with a sour plum (but it has to be of the right sourness and sweetness). I don't like sour plums yet this one is a stunner, a go-to if this was on taps at any other place.
Pairs absolutely gorgeously with spicy food that's heavy on the rich umami flavours, so I had this with a bowl of wagyu beef noodles with house broth and shrimp wantons in chili oil - it was heaven. Clean, crisp with a good amount of zest and juicy sweetness, this is a classic.
